“A survey on modes and difficulties of processing and marketing of the fresh Ricotta cheese produced
in Sardinia”. Twenty-five dairies have been considered for a manufacture survey about the Ricotta fresh cheese
produced in Sardinia with sheep milk. They represent in number about 40% of the dairy industries in Sardinia and
50% in volume of total processed milk in this region. The dairies considered annually produce about 2550 tons of
Ricotta fresh cheese. The survey has been carried out using the method of the direct interview. The questions
concerned: (i) problems about technological and commercial aspects; (ii) the market outlet and the product
development; and (iii) problems concerning hygienic and sanitary management. Large differences have been pointed
out in technological practices and commercial strategies. The principal problems expressed by the Ricotta cheese
producers concerned the price of the product that is too low, the product conservation (cold chain, microbial
contamination), the availability of appropriate room for Ricotta production and the mechanization of the process.
