Abstract:
A microbiological survey of 5 Rwanda banana ferments isolated 30
yeast strains belonging to the following species:Cryptococcus albidusvar.albidus,Saccharomyces bayanus,Saccharomyces cerevisiae,Saccharomyces
chevalieriandSaccharomyces rosei.
Certain of these were Sacch.cerevisiae stranis, particularly useful
as starters in the alcoholic fermentation of banana juice.
